Bagels

Ingredients: 3 cups shredded mozzarella cheese  4 tablespoons cream cheese 1 1/2 cups almond flour 2 teaspoons xanthan gum 2 eggs 2 tablespoons Kerry gold butter  Instructions: In a bowl microwave the mozzarella and cream cheese for 1 minute, stir then microwave for 30 more seconds  In a separate bowl mix together the almond flour and xanthan gum Combine the wet and dry ingredients and add two eggs - mix well (I use my hands) Form the dough into bagel shapes Melt butter and brush the tops of the bagels then top with your favorite seasonings. (I love Trader Joe’s everything but they bagel seasoning)  Bake at 400 degrees for 15-20 minutes or until golden brown  *per my ingredients this came out to be 28 carbs for the whole batch. Carb count is subject to change per your ingredients and/or brands used.
