- 3 cups shredded mozzarella cheese
- 4 tablespoons cream cheese
- 1 1/2 cups almond flour
- 2 teaspoons xanthan gum
- 2 eggs
- 2 tablespoons Kerry gold butter
Instructions:
- In a bowl microwave the mozzarella and cream cheese for 1 minute, stir then microwave for 30 more seconds
- In a separate bowl mix together the almond flour and xanthan gum
- Combine the wet and dry ingredients and add two eggs - mix well (I use my hands)
- Form the dough into bagel shapes
- Melt butter and brush the tops of the bagels then top with your favorite seasonings. (I love Trader Joe’s everything but they bagel seasoning)
- Bake at 400 degrees for 15-20 minutes or until golden brown
*per my ingredients this came out to be 28 carbs for the whole batch. Carb count is subject to change per your ingredients and/or brands used.
