Chocolate Peanut Butter Fudge Cups


Ingredients

1/2 cup of butter
1 cup peanut butter
1 cup confectioners swerve
1/8 tsp stevia
1 tsp vanilla extract
1 9 oz bag of stevia chocolate chips (Lilly's)


Instructions
  • Melt butter and peanut butter together in the microwave, stir every 30 seconds until melted.
  • Add swerve, stevia and vanilla and stir until smooth.
  • Pour peanut butter mixture into mini muffin tins lined with cups until 3/4 full.
  • Place in freezer for 10 minutes.
  • Place chocolate chips in a microwave safe dish and microwave, stir every 30 seconds until melted.
  • Pour melted chocolate over frozen peanut butter cups and place back in freezer for 15 minutes (or until solid).

Makes 28 cups, 2.8 carbs each

Cheesy Garlic Bread

Ingredients: 1 1/2 cups shredded mozzarella cheese 1/2 cup shredded cheese (of choice, I used cheddar w/ monterey jack) 3/4 cup almond flour 2 tablespoons cream cheese 2 tablespoon minced garlic 1 teaspoon baking powder salt to taste 1 egg 2 tablespoons butter Fresh parsley Instructions: Melt the mozzarella and cream cheese in the microwave for 90 seconds Add almond flour, 1 tablespoon garlic, parsley (to taste), baking powder, and salt to cheese mixture and microwave for 30 more seconds Add the egg to the mixture to make dough Place dough onto baking sheet with parchment paper and form the breads shape Microwave butter and mix in fresh parsley (to taste) and 1 tablespoon minced garlic and brush over the top of the dough Sprinkle 1/2 cup of shredded cheese on top and bake at 425 degrees for 10-15 minutes *Whole batch came out to be 16 carbs. Zucchini Au Gratin

    Ingredients Garlic powder 1 small white onion 4 cups zucchini raw Salt pepper 1/4 tsp xanthan gum 2 tbsp butter 1/2 cup heavy whipping cream 3 cups shredded cheese - I use Mexican/white/orange cheese mixture   Instructions Preheat oven to 375 degrees Grease 8x8 pan Chop zucchini Chop onion Place 1/3 of zucchini and onion onto pan Sprinkle 1 cup of cheese on top Sprinkle salt/pepper and garlic powder on top Repeat steps 5-7, three times Combine heavy cream, xanthan gum, butter, and garlic powder (to taste) unto a microwave safe dish & microwave until melted Pour mixture evenly over the zucchini layers Bake for 45 minutes or until the liquid has thickened and the top is golden brown Entire pan is 30 carbs
