Batter:
- 1 1/2 cup almond flour
- 3/4 cup powdered swerve
- 1 teaspoon baking powder
- 1/3 teaspoon salt
- 4 eggs
- 1/2 cup cream cheese
- 4 tablespoons softened butter
- 1 teaspoon vanilla
Frosting:
- 3/4 cup powdered swerve
- 1/2 cup cream cheese
- 4 tablespoons softened butter
- 1 teaspoon vanilla
Instructions:
- Preheat oven to 350 degrees
- Mix butter with swerve, then mix the cream cheese and vanilla
- Then mix the eggs one at a time until ingredients are mixed well
- Add almond flour, salt, and baking powder and mix well
- Fill cupcake pan 3/4 full and bake for 20 minutes
- Let cupcakes cool and add frosting
Frosting:
- Mix butter and serve together
- Add the cream cheese and vanilla and mix well
Each cupcake including frosting is 2.5 carbs
