Maple Pumpkin Donuts


Ingredients:

Donuts:
  • 1 1/2 cups almond flour
  • 1/4 cup oat fiber
  • 3 eggs - separated
  • 3/4 cup pumpkin puree
  • 2 tablespoons butter - softened
  • 1/2 cup brown sugar (Swerve)
  • 2 teaspoons pumpkin pie spice
  • dash of salt
Glaze:
  • 1/4 cup cream cheese - softened
  • 1/4 cup + 2 tablespoons confectioners Swerve
  • 3 tablespoons heavy cream
  • 3 tablespoons sugar free maple syrup
Instructions:

  • Heat the oven to 350 degrees
  • Mix the almond flour, oat fiber, baking powder, pumpkin pie spice and salt in a bowl
  • In a separate bowl, beat the egg whites until you have reached soft peaks
  • In another separate bowl beat the egg yolks, pumpkin puree, butter and swerve
  • Add the egg whites to the wet mix and stir until well combined
  • Mix the wet mix with the dry mix until combined
  • Either use a donut pan to place dough into or make balls out of the dough and use your finger to make the hole in the middle
  • Bake for 20 minutes
  • Let the donuts cool while you are making the glaze
  • Mix the cream cheese, swerve, heavy cream and sugar free syrup together then dip the tops of the donuts into the glaze
  • Let it sit and enjoy!
*With my ingredients these turned out to be 2.25 carbs each one (made 12 donuts). Carb count is subject to change with your own ingredients.

Cinnamon Rolls

  Ingredients: Dough 3 1/2 cups shredded mozzarella cheese 1 1/2 cups almond flour 4 tablespoons cream cheese - softened splash of vanilla 1/2 cup confectioners Swerve 2 eggs 1 teaspoon baking powder Filing 1/2 cup confectioners Swerve 1/2 cup softened Kerry Gold butter 1 1/2 tablespoon ground cinnamon Icing 4 tablespoons cream cheese - softened splash of vanilla 1/2 cup confectioners Swerve Instructions: Heat oven to 375 degrees Microwave cheese for 90 seconds - stir then add remaining dough ingredients and microwave for 30 more seconds until dough forms Roll dough between two pieces of parchment paper In a bowl mix together the filing ingredients, then use a spatula and spread all over rolled dough Using a knife cut 8-10 pieces of dough and roll them to make a cinnamon roll Place cinnamon rolls on a baking sheet with parchment paper and bake between 15-20 minutes Combine the icing ingredients and spread all over rolls - then enjoy! *My ingr...

Chocolate Chip Cookies

Ingredients: 1 1/2 cups almond flour 1/4 teaspoon xanthan gum 1/2 teaspoon baking soda 1/4 teaspoon baking powder dash of salt 6 tablespoons softened butter 10 tablespoons confectioners swerve 1/2 teaspoon brown sugar - swerve splash of vanilla 2 eggs 1/4 cup lily's chocolate chips (stevia chocolate) Instructions: Pre heat oven to 350 degrees In a large bowl combine the flour, xanthan gum, baking soda, baking powder and salt In a separate bowl, beat together the butter, sweeteners, vanilla, and brown sugar Add eggs and beat until well combined Mix wet ingredients with dry Fold in chocolate chips Place parchment paper on baking pan Make dough balls and place on baking sheet *dough will be tacky, I just spoon a blob on the pan Bake for 9-10 minutes - until golden brown *With my ingredients it turned out to be 3net carbs per two cookies (makes 15-16 cookies) Carb count is subject to change with your own ingredients/brands used.
