Keto Lasagna



Ingredients:

Sauce & Toppings
  • 1 pound of ground beef
  • 1 bell pepper
  • 1 tablespoon dry chopped onion (you can use fresh)
  • garlic powder to taste
  • 1/2 cup ricotta cheese
  • 4oz mozzarella cheese (buy a block and slice)
  • 1 can of diced tomatoes
  • 1 to 1 1/2 cups of roa's marinara sauce
  • 1 1/2 cups shredded mozzarella

Cheese layer
  • 4oz cream cheese - softened
  • 2 eggs
  • garlic powder and Italian seasoning to taste
  • 1/4 cup parmesan cheese
  • 1 1/4 cups shredded mozzarella
Instructions for Cheese Layer
  • Heat oven to 350 degrees
  • Beat the cream cheese and eggs together, add in garlic powder and Italian seasoning and 1/4 cup parmesan
  • Fold in mozzarella
  • Place on baking sheet with parchment paper and make a rectangle - big enough for two layers in an 8x8 dish
  • Bake for 20 or so minutes - until golden brown
Sauce
  • Cook ground beef
  • Once beef is fully cooked, add bell pepper, and onion
  • Stir in diced tomatoes and roa's sauce
  • Add any extra seasonings to taste - e.g. crushed red pepper flakes, garlic, etc.
  • Place 1/3 of the sauce on the bottom of the 8x8 dish
  • Place 1/2 of the baked cheese layer on top
  • Add 1/4 cup of ricotta cheese, and 2oz of the mozzarella on top
  • Layer with 1/3 sauce mixture
  • Add remaining baked cheese layer
  • Add remaining 1/4 cup of ricotta cheese and 2oz of mozzarella
  • Add the remaining 1/3 sauce mixture
  • Place 1 1/2 cups of shredded mozzarella on top
  • Bake at 350 for 25-35 minutes, until cheese is golden brown

Zucchini Au Gratin

    Ingredients Garlic powder 1 small white onion 4 cups zucchini raw Salt pepper 1/4 tsp xanthan gum 2 tbsp butter 1/2 cup heavy whipping cream 3 cups shredded cheese - I use Mexican/white/orange cheese mixture   Instructions Preheat oven to 375 degrees Grease 8x8 pan Chop zucchini Chop onion Place 1/3 of zucchini and onion onto pan Sprinkle 1 cup of cheese on top Sprinkle salt/pepper and garlic powder on top Repeat steps 5-7, three times Combine heavy cream, xanthan gum, butter, and garlic powder (to taste) unto a microwave safe dish & microwave until melted Pour mixture evenly over the zucchini layers Bake for 45 minutes or until the liquid has thickened and the top is golden brown Entire pan is 30 carbs                 

Cinnamon Rolls

  Ingredients: Dough 3 1/2 cups shredded mozzarella cheese 1 1/2 cups almond flour 4 tablespoons cream cheese - softened splash of vanilla 1/2 cup confectioners Swerve 2 eggs 1 teaspoon baking powder Filing 1/2 cup confectioners Swerve 1/2 cup softened Kerry Gold butter 1 1/2 tablespoon ground cinnamon Icing 4 tablespoons cream cheese - softened splash of vanilla 1/2 cup confectioners Swerve Instructions: Heat oven to 375 degrees Microwave cheese for 90 seconds - stir then add remaining dough ingredients and microwave for 30 more seconds until dough forms Roll dough between two pieces of parchment paper In a bowl mix together the filing ingredients, then use a spatula and spread all over rolled dough Using a knife cut 8-10 pieces of dough and roll them to make a cinnamon roll Place cinnamon rolls on a baking sheet with parchment paper and bake between 15-20 minutes Combine the icing ingredients and spread all over rolls - then enjoy! *My ingredie
